About the Recipe
Getting your 5-a-day is easy when you have a stir fry that is rich in fresh, crunchy vegetables. Here is a recipe that can be adapted to the meat of your choice and the vegetables of your choice. Simply slice the meat thinly for tenderness and ease of cooking, add the vegetables of your choice and cook with oil, garlic and chili flakes to taste. If you really want to be adventurous, you can also add some cashew nuts for protein and for the crunch factor! If you are using beef, make sure to get a tender cut like sirloin or fillet or marinade it overnight in the sauce to tenderise it.
Ingredients
Sesame oil or vegetable oil (2tbsp)
Soy Sauce (2-3 tbsp)
2 garlic cloves crushed
Chili flakes (1/4 teaspoon or to taste)
Meat of your choice finely sliced - 450g​
​Vegetables of your choice, suggestions include:
mangetout
mushrooms
baby corn on the cob
finely sliced broccoli
finely sliced carrots
250g rice
green/yellow pepper
red onion
To thicken the sauce, try adding a teaspoon of potato starch to a small bit of cold water and add to the sauce in the pan before serving.
Preparation
Cook the rice per cooking instructions and begin the stir fry.
Heat oil in a wok or suitable frying pan, adding the meat and garlic, soy sauce, chili and cook until meat browned.
Add in the vegetables and cook until meat cooked through and vegetables are tender.
Add additional soy sauce and chili or optional cashew nuts - as needed as you cook.
Serve with rice.
