About the Recipe
Baked apples look a lot more difficult to make than they actually are, so they are a great dinner party dessert. And as they have apples in them, you know you are helping your guests/family/friends to be that much healthier - remember the adage an apple a day keeps the doctor away! Perfect for a autumn or winter pudding, kids and adults alike will love this - and it's a great way to combine a few of your five a day. We use cranberries and pecans for our filling but feel free to experiment with other ingredients.
Ingredients
4 apples
50g dried cranberries/craisins
50g fresh cranberries
50g chopped pecans
125ml maple syrup
150ml cider
Preparation
Preheat oven to 180c/gas mark 4
Cut the lid from the top of the apple, core it and then cut around the equator of the apple.
Combine the cranberries, pecans, and the maple syrup together until thoroughly mixed.
Place the bottom half of the apples on an oven-safe tin/dish and stuff with cranberry/pecan mixture.
Replace apple lids, top off with some more of the cranberry mixture and pour cider over the stuffed apples.
Drizzle with any remaining syrup.
Bake for 30-40 minutes, basting the apples with cider every 10 minutes.
