Ingredients

  • 8 large eggs

  • 1 cup chopped kale, stems removed

  • 1 small sweet potato, peeled and diced into small cubes

  • 1/2 cup crumbled feta cheese

  • 1/4 cup milk (or non-dairy alternative)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Optional: chopped fresh herbs for garnish (such as parsley or chives)

Preparation

  • Preheat the oven: Preheat your oven to 375°F (190°C).

  • Prepare the sweet potato: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potato cubes and cook, stirring occasionally, until they are tender and lightly browned, about 8-10 minutes. Remove from heat and set aside.

  • Prepare the kale: In the same skillet used for the sweet potatoes, add the remaining tablespoon of olive oil. Add the chopped kale and minced garlic to the skillet and sauté until the kale is wilted and tender, about 2-3 minutes. Remove from heat and set aside.

  • Whisk the eggs: In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  • Assemble the frittata: Grease a 9-inch oven-safe skillet or pie dish with cooking spray or olive oil. Spread the cooked sweet potatoes and sautéed kale evenly across the bottom of the skillet. Sprinkle the crumbled feta cheese over the top.

  • Pour the egg mixture: Pour the whisked egg mixture evenly over the sweet potato, kale, and feta cheese in the skillet.

  • Bake the frittata: Place the skillet in the preheated oven and bake for 20-25 minutes, or until the frittata is set in the centre and the edges are golden brown.

  • Serve: Once baked, remove the frittata from the oven and let it cool for a few minutes. Slice into wedges and garnish with chopped fresh herbs, if desired. Serve warm and enjoy!
