Ingredients
600g Rooster potatoes, cut into wedges
300g cauliflower florets
1½ tbsp ground cumin (½ tbsp for roasting, 1 tbsp for the sauce)
3 large tomatoes, finely diced
2 tbsp butter
1 tbsp ground turmeric
2 cloves of garlic, crushed
1 onion, finely chopped
125g full-fat yogurt
½ tbsp ground garam masala
A handful of fresh coriander, chopped
Salt and pepper, to taste
Preparation
1. Roast the Potatoes and Cauliflower
Preheat oven to 200°C (392°F).
Arrange potato wedges and cauliflower florets on a baking tray lined with baking paper. Drizzle with olive oil, and season with salt, pepper, and ½ tbsp of ground cumin.
Roast for 35-40 minutes, or until golden brown and crispy.
2. Prepare the Masala Sauce
While the veggies roast, finely dice 3 tomatoes.
In a deep pot, melt 2 tbsp butter over low heat. Add the remaining 1 tbsp of cumin, 1 tbsp of turmeric, and the crushed garlic. Stir until fragrant.
Add the chopped onion and diced tomatoes to the pot. Cook, stirring, for 2-3 minutes until softened, then season with salt and pepper. Let the mixture simmer for 10-15 minutes to develop a rich, thick sauce.
3. Add Yogurt and Spices
Mix in the 125g of full-fat yogurt and ½ tbsp ground garam masala, stirring until the sauce is creamy and well-combined.
Remove from heat and let the flavors meld together.
4. Combine Roasted Veggies with Sauce
Add the roasted potatoes and cauliflower to the pot, gently stirring to coat with the masala sauce.
Garnish with a generous handful of chopped fresh coriander.
5. Serve Your Indian Potato and Cauliflower Masala
