Baked potatoes are a comforting classic that can be easily customized with your favourite toppings. In this recipe, we take the humble baked potato to the next level by topping it with crispy bacon and crispy fried onions. The combination of fluffy potato flesh, crispy bacon, and crunchy onions creates a satisfying dish that's perfect for a hearty meal or a cozy side dish. Ingredients

  • 4 large russet potatoes

  • 8 slices of bacon

  • 1 large onion thinly sliced.

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Optional toppings: sour cream, shredded cheese, chopped chives.

Preparation

  • Preheat the oven: Preheat your oven to 200°C (400°F)

  • Prepare the potatoes: Wash the potatoes thoroughly and pat them dry with paper towels. Pierce each potato several times with a fork to allow steam to escape while baking.

  • Bake the potatoes: Place the potatoes directly on the oven rack or on a baking sheet lined with aluminium foil. Bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.

  • Cook the bacon: While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess grease. Once cooled, chop the bacon into small pieces.

  • Crispy fried onions: In the same skillet used for the bacon, add 2 tablespoons of olive oil over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are golden brown and crispy. This will take about 10-15 minutes. Once crispy, remove the onions from the skillet and place them on a paper towel-lined plate to drain any excess oil.

  • Assemble: Once the potatoes are baked, remove them from the oven and let them cool slightly. Slice each potato lengthwise down the middle, being careful not to cut all the way through. Use a fork to fluff up the insides of the potatoes.

  • Top the potatoes: Sprinkle each potato with salt and pepper to taste. Then, top each potato with a generous amount of crispy bacon and crispy fried onions.

  • Serve: Serve the loaded baked potatoes hot, with optional toppings such as sour cream, shredded cheese, or chopped chives.
