Carrot & Cashew Pate

This Carrot & Cashew Pate is a tasty alternative to the usual store bought hummus for a snack or an hors d'oeuvre.  It is made in approx 10 minutes maximum and gives you great protein from the cashews and vitmain A from the carrots.  This recipe serves as an appetiser for maximum 4 not-so-hungry people, but if you want to also have a supply to keep in your fridge for a convenient, healthy snack, we would recommend doubling the recipe!
