Broccoli Salad

Our Win You Over Broccoli Salad is all but guaranteed to win you over to eating broccoli raw, even if you are not a huge fan of this incredibly healthy vegetable.

 

 It's easy to prepare, and always steals the show at BBQs, buffets, picnics and dinners.  This recipe will give you a great salad to break up the monotony of coleslaw and potato salad at family gatherings.

 

NOTE: The picture left has quite large cut florets and very little dressing on it.  If you like your dressing, don't be afraid to lash it on.

Ingredients 

  • 3 heads of fresh broccoli, cut into small bite size pieces by removing all the stem so that only the floret at the very end remains

  • 1 small red onion, chopped

  • 200g of shredded cheddar cheese

  • 250g streaky bacon, fried and chopped

  • (raisins optional)

 

Dressing: (amounts can vary- make according to your taste)

  • 250 ml light mayonnaise

  • 3 tablespoons of sugar

  • 3 tablespoons of white distilled vinegar

Method

  • Combine the first 4 ingredients together and mix well.

  • To make the dressing, combine all the dressing ingredients and mix well.  You can add more/less mayo, sugar or vinegar depending on your taste.  Add as much or as little dressing as suits your taste.

  • Chill in the fridge for an hour or two before serving if possible, for maximum crunch.
