Ingredients

  • 2 tablespoons olive oil

  • 1 onion, chopped.

  • 2 cloves garlic, minced.

  • 2 large potatoes peeled and diced.

  • 4 cups vegetable or chicken broth

  • 1 can (15 ounces) cannellini beans, drained and rinsed.

  • 2 cups chopped kale; stems removed.

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

Preparation

  • Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic to the pot and sauté until the onion is softened and translucent, about 5 minutes.
