About the Recipe
A carrot twist on a familiar Irish favourite. Grated carrot adds subtle sweetness and moisture while oats give the loaf a wholesome texture. Best served slightly warm with plenty of butter

Ingredients
350g wholemeal flour
100g plain flour
50g porridge oats
200g carrots, finely grated
1 tsp bicarbonate of soda
1 tsp salt
400ml buttermilk
1 tbsp honey
2 tbsp porridge oats, for topping
Preheat the oven to 200°C, or 180°C fan.
Mix the wholemeal flour, plain flour, oats, bicarbonate of soda and salt in a large bowl.
Stir through the grated carrot.
Mix the buttermilk and honey together.
Pour into the dry ingredients and mix gently until a soft dough forms.
Shape into a round loaf and place on a lined baking tray.
Cut a deep cross into the top and sprinkle with oats.
Bake for 35 to 40 minutes until golden and the base sounds hollow when tapped.
Allow to cool slightly before slicing.
