About the Recipe

A proper comforting dinner for a cool Irish evening. Slow cooking allows the beef to become beautifully tender while the carrots add natural sweetness to the rich gravy.

Ingredients

  • 800g stewing beef, diced

  • 600g carrots, peeled and chopped

  • 600g potatoes, peeled and chopped

  • 2 onions, sliced

  • 2 cloves garlic, chopped

  • 2 tbsp plain flour

  • 750ml beef stock

  • 1 tbsp tomato purée

  • 1 tbsp Worcestershire sauce

  • 2 sprigs fresh thyme

  • 1 bay leaf

  • 2 tbsp oil

  • Salt and freshly ground black pepper

  • Fresh parsley to serve

  1. Heat the oil in a large casserole pot and brown the beef in batches.

  2. Remove the beef and gently cook the onions for 5 minutes.

  3. Add the garlic and cook for another minute.

  4. Stir in the flour and tomato purée.

  5. Gradually add the beef stock, stirring well.

  6. Return the beef to the pot and add the carrots, potatoes, Worcestershire sauce, thyme and bay leaf.

  7. Bring to a gentle simmer, cover and cook for about 1½ hours until the beef is tender.

  8. Season to taste and finish with fresh parsley.
