About the Recipe

Crisp on the outside and soft and cheesy in the middle, these croquettes are a great way to combine carrots and potatoes. They're particularly good served with a fresh salad or as a tasty family side dish.

Ingredients

  • 400g potatoes, peeled and chopped

  • 300g carrots, peeled and chopped

  • 100g mature Irish cheddar, grated

  • 2 spring onions, finely chopped

  • 1 egg, beaten

  • 75g plain flour

  • 120g breadcrumbs

  • ½ tsp garlic powder

  • Salt and freshly ground black pepper

  • Oil for shallow frying

  1. Boil the potatoes and carrots together for 15 to 20 minutes until tender.

  2. Drain thoroughly and mash until fairly smooth.

  3. Allow to cool slightly, then mix in the cheddar, spring onions and garlic powder.

  4. Season with salt and black pepper.

  5. Shape the mixture into small croquettes.

  6. Roll each croquette in flour, then beaten egg, followed by breadcrumbs.

  7. Heat a shallow layer of oil in a frying pan.

  8. Cook the croquettes for 3 to 4 minutes on each side until crisp and golden.

  9. Drain on kitchen paper and serve warm.
