About the Recipe
Roasting fresh carrots with maple syrup and butter creates a beautifully sticky glaze while bringing out their natural sweetness. This simple side dish works particularly well with roast chicken, pork or a traditional Sunday dinner.

Ingredients
800g carrots, peeled and cut into batons
2 tbsp maple syrup
30g butter, melted
1 tbsp olive oil
1 tsp fresh thyme leaves
½ tsp garlic powder
Salt and freshly ground black pepper
Fresh parsley or thyme to garnish
Preheat the oven to 200°C, or 180°C fan.
Place the prepared carrots in a large roasting tray.
Mix the maple syrup, melted butter, olive oil, thyme and garlic powder together.
Pour the mixture over the carrots and toss until evenly coated.
Season with salt and freshly ground black pepper.
Roast for 25 to 30 minutes, turning halfway through, until the carrots are tender and caramelised.
Spoon any remaining glaze from the tray over the carrots and garnish with fresh herbs before serving.
