About the Recipe
These crispy carrot fritters are an easy way to turn fresh carrots into something a little different. Warming spices complement their natural sweetness, while a spoonful of cool yoghurt makes the perfect accompaniment.

Ingredients
500g carrots, peeled and grated
2 eggs
80g plain flour
2 spring onions, finely sliced
2 cloves garlic, finely chopped
1 tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
2 tbsp fresh parsley, chopped
Salt and freshly ground black pepper
2 tbsp olive oil, for frying
Natural yoghurt, to serve
Place the grated carrots in a clean tea towel and squeeze out as much excess moisture as possible.
Transfer the carrots to a large bowl and add the eggs, flour, spring onions, garlic, cumin, paprika, coriander and parsley.
Season with salt and black pepper and mix until well combined.
Heat a little olive oil in a large frying pan over a medium heat.
Spoon portions of the carrot mixture into the pan and gently flatten into small fritters.
Cook for 3 to 4 minutes on each side until golden and crisp.
Transfer to kitchen paper and repeat with the remaining mixture.
Serve warm with natural yoghurt and fresh herbs.
