About the Recipe

These crispy carrot fritters are an easy way to turn fresh carrots into something a little different. Warming spices complement their natural sweetness, while a spoonful of cool yoghurt makes the perfect accompaniment.

Ingredients

  • 500g carrots, peeled and grated


  • 2 eggs


  • 80g plain flour


  • 2 spring onions, finely sliced


  • 2 cloves garlic, finely chopped


  • 1 tsp ground cumin


  • 1 tsp smoked paprika


  • ½ tsp ground coriander


  • 2 tbsp fresh parsley, chopped


  • Salt and freshly ground black pepper


  • 2 tbsp olive oil, for frying


  • Natural yoghurt, to serve

  1. Place the grated carrots in a clean tea towel and squeeze out as much excess moisture as possible.

  2. Transfer the carrots to a large bowl and add the eggs, flour, spring onions, garlic, cumin, paprika, coriander and parsley.

  3. Season with salt and black pepper and mix until well combined.

  4. Heat a little olive oil in a large frying pan over a medium heat.

  5. Spoon portions of the carrot mixture into the pan and gently flatten into small fritters.

  6. Cook for 3 to 4 minutes on each side until golden and crisp.

  7. Transfer to kitchen paper and repeat with the remaining mixture.

  8. Serve warm with natural yoghurt and fresh herbs.
