Irish Cheddar Carrot Bake

About the Recipe

Sweet carrots and mature Irish cheddar make a wonderfully comforting combination. Finished with a crisp breadcrumb topping, this simple bake makes a delicious side for roast chicken, ham or beef.

Ingredients

  • 5800g carrots, peeled and sliced


  • 30g butter


  • 30g plain flour


  • 400ml milk


  • 150g mature Irish cheddar, grated


  • 50g breadcrumbs


  • 1 tsp Dijon mustard


  • ½ tsp dried thyme


  • Salt and freshly ground black pepper


  • Fresh parsley to garnish

  1. Preheat the oven to 190°C, or 170°C fan.


  2. Cook the carrots in lightly salted boiling water for 8 minutes, then drain.


  3. Melt the butter in a saucepan and stir in the flour. Cook for 1 minute.


  4. Gradually whisk in the milk and cook until the sauce thickens.


  5. Stir in the mustard and 100g of the cheddar. Season with thyme, salt and black pepper.


  6. Place the carrots in an ovenproof dish and pour over the cheese sauce.


  7. Mix the remaining cheddar with the breadcrumbs and scatter over the top.


  8. Bake for 20 to 25 minutes until bubbling and golden.
