VIV'S MERINGUE KISSES WITH STRAWBERRIES

If you are a dessert person but like to watch the calories, meringue is your best friend.  This recipe uses fresh strawberries and has only 1 Slimming World syn per kiss!  Viv has used our Meade potato starch to make these but until it is available in a retailer near you, you can settle for cornflour!

One of our favourite sources of healthy, easy recipes that are full of flavour is vivs_home_cooking aka Viviane McCarthy (CHECK OUT HER INSTAGRAM PAGE!).  Along with her daughters (known through their Cooking with Midnight Fire site), she spends a lot of time in the kitchen perfecting amazing recipes and finding ways to use her airfryer to make healthy food to feed her family and share with her Slimming World friends.

Ingredients 

Meringues

  • 3 large (large) egg whites, about 100g
     

  • caster sugar 200g 

  • 1⁄2 tsp cornflour We use potato starch from @meade_farm

  • 1⁄2 tsp white wine vinegar or lemon juice

  • 1⁄2 tsp vanilla extract

* makes 50 mini meringues

Filling Mix

  • 100g kvarg or mascarpone cheese

  • Strawberries or other summer berries, chopped

Method

  1. Preheat the oven to 120°C

  2. Line a baking sheet with parchment paper.

  3. Put the egg whites into a bowl, whisk on full speed until they form stiff peaks.

  4. Reduce the speed of the mixer and add the sugar a little at a time, beating thoroughly.

  5. When all the sugar has been incorporated, add the cornflour and vinegar or lemon juice and whisk again on high speed until the mixture is glossy and stays put when the bowl is turned upside down.

  6. Fold in the vanilla extract to flavour the meringue, then spoon the mixture into a piping bag fitted with a 1cm star nozzle.

  7. Pipe small sized blobs :) of meringue on the prepared baking sheet, making sure they do not touch one another.

  8. Bake for 25–30 minutes at 100°C, until firm to the touch.

  9. Let them cool

  10. Carefully lift the meringues off the paper and sandwich them together with some * strawberries mix.
