Stuffed Courgette Roll Lasagne

This variation on lasagna by our favourite chef Viv is brilliant for getting more healthy green vegetables into your diet and cutting down on the carbs.  the courgettes are used as the 'pasta' for the rolls and you can fill them with whatever meat and cheese combo appeals to you.  We have chosen chicken here but you could go vegetarian and skip the meat or you could add some beef.

Ingredients 

  • 3 large courgettes, sliced horizontally

  • Spinach

  • 1 chicken breast cooked and shredded

  • 1 tsp chopped garlic 

  • 1/2 tsp chilli

  • Spray oil 

  • 100g goats cheese or ricotta 

  • 100g shredded mozzarella cheese

  • Grated parmesan cheese for topping

  • 1 large egg

  • Fresh basil

  • Red pasta sauce 

Method

1.Carefully slice the courgettes long ways into long ribbons.
2.Place them on a baking sheet, line with parchment paper and lay the courgette ribbons down flat next to each other. Sprinkle the salt and pepper over them, Place the tray in the over for about 10 minutes at 180°C, this will drain the water out of and reduce cooking time.
3.Cook your chicken using the garlic and chilli and shred it, letting it cool down a bit.
4.In the large bowl add the chicken, goat cheese, spinach, mozzarella,egg, fresh basil.Mix until fully combined.
5.Pour half the jar of your favorite sauce into the bottom of the skillet or baking dish and spread evenly.
6.Remove the courgettes from the oven.
7.Take one spoon of the mix and spread it evenly on the courgette ribbon.
8.Sprinkle mozzarella then roll them up, using your fingers to help keep the stuffing in.
9.Place the roll into the skillet/dish with the opening of the flap against the wall of the dish to keep it from unraveling. Repeat until skillet is full with the rolls.
10.Using a spoon, spoon more sauce in between the rolls, then top with parmesan cheese.
11.Bake in the oven for 25 minutes.
12. Remove from oven, top with fresh basil and Enjoy!
