Baked Potato with Crispy Bacon

  • 2 large Meade Farm potatoes, washed and pat dried

  • Two fried bacon strips cut into pieces

  • 2 tbsp Crispy fried onion 

  • Chopped scallions to garnish

  • 2 tsp unsalted butter

  • Sea salt and pepper to taste

  • Extra virgin olive oil to rub the potatoes with


  1. Pre-heat the oven to 180 degrees Celsius, line a parchment paper on a tray and set aside.

  2. Using a fork make holes all over the potatoes. Rub olive oil all over and sprinkle sea salt and pepper. Bake in preheated oven for about 40 to 50 mins, until the potatoes are fully cooked.

  3. Slit the potatoes on the top, make a cross, add a knob of butter, sprinkle the chopped bacon, scallions and fried onions just before serving. Enjoy!
