Butternut squash is a brilliant nutrient dense veg but oftentimes people just aren't exactly what to do with it other than the old standby butternut squash soup. Here is a tasty main dish that also includes that superfood extraordinaire sweet potatoes. It is guaranteed to tickle the taste buds with all the flavourful herbs.

Coriander and Herb Potato Patties
These potato patties are handy because they can be made up to 6 hours ahead and just fried up in a few minutes before the dinner is ready to serve. A perfect accompaniment to steak and a great summer side (think BBQ!), these patties offer a delicious alternative to mashed potatoes. If you don't like coriander you can substitute rosemary or parsley or the herb of your choice.

Feta Kale and Sweet Potato Frittata
Frittatas are incredibly easy and can be loaded with many more ingredients than omelettes as they don't need to be folded and removed in their entirety from a pan. You simply cook the vegetable ingredients in an ovenproof cast-iron pan, add the egg mixture cooking until it is set and then placing the frittata in the oven to finish.
