Potato Cakes

Potato cakes are the perfect way to use leftover mashed potatoes while offering up something new and tasty.  The crispy outer shell and the inner hint of parmesan and herbs can transform leftovers into the ultimate show-stopping accompaniment to any main dish.


One of our favourite sources of healthy, easy recipes that are full of flavour is vivs_home_cooking aka Viviane McCarthy.  Along with her daughters (known through their Cooking with Midnight Fire site), she spends a lot of time in the kitchen perfecting amazing recipes and finding ways to use her airfryer to make healthy food to feed her family and share with her Slimming World friends.


These potato cakes are great for Slimmers as they are prepared using a minimum amount of light spray oil and the airfryer.  If you do not own an airfryer or you want to be indulgent, work away and prepare using a deep fryer or the frying pan - your decision!

  • Spray oil

  • 250g cooked potato (mashed)

  • 2-3 tbsps Self raising flour ... adjust if needed 

  • 2 tbsps Parmesan cheese 

  • 1 Egg

  • Salt, ground pepper 

  • 1 pinch Oregano (optional)

  • 1 pinch Parsley (optional)

  • Egg wash 


  1. Mix all the ingredients together.

  2. Shape the mix into balls or patties as you prefer.

  3. Coat them with spray oil.

  4. Place them in the airfryer.

  5. Cook them for 10 minutes at 200°C.

  6. 2 minutes into cooking time coat them with egg wash.

  7. Remove and serve.
