Baked Potato with crispy bacon by soulful_and_healthy

This recipe by soulful_and_healthy was inspired by our Irish Gold potatoes with their creamy, sweet flesh.  What better accompaniment to the sweet of the Irish Gold potato than a little salty bacon and some crispy onions?

A healthy accompaniment to a burger or a perfect lunchtime snack...your choice!

Baked Potatoes with Crispy Bacon and Cri


  • 2 large Meade Farm Irish Gold potatoes, washed and pat dried

  • Two fried bacon strips cut into pieces

  • 2 tbsp Crispy fried onion 

  • Chopped scallions to garnish

  • 2 tsp unsalted butter

  • Sea salt and pepper to taste

  • Extra virgin olive oil to rub the potatoes with


  1. Pre-heat the oven to 180 degrees Celsius, line a parchment paper on a tray and set aside.

  2. Using a fork make holes all over the potatoes. Rub olive oil all over and sprinkle sea salt and pepper. Bake in preheated oven for about 40 to 50 mins, until the potatoes are fully cooked.

  3. Slit the potatoes on the top, make a cross, add a knob of butter, sprinkle the chopped bacon, scallions and fried onions just before serving. Enjoy!
